This is the best cutting board in the world, seriously! Not harvested until a ripe 250-300 years old, Hiba trees grow in the Aomori Prefecture in Northern Honshu and are a part of the cypress family. Aomori Hiba wood makes for an ideal cutting surface because of it's softness, it won't damage blade edges. Additionally, due to a compound called Hinokitiol, Aomori Hiba wood is naturally somewhat antimicrobial and germicidal and is very rot and mold resistant. Because of these factors Aomori Hiba wood is traditionally often reserved for building shrines and temples in Japan. It also smells amazing!
