Aomori Hiba wood makes for and ideal cutting surface because it has the perfect firmness level, so it won't damage blade edges. Due to a compound called Hinokitiol, Aomori Hiba wood is also naturally full of antimicrobial and germicidal properties and is resistant to both rot and mold. Because of these resilient Aomori Hiba wood is often reserved for building shrines and temples in Japan. Plus it smells amazing!
