We love French knives! They have a rich history, are elegant, and have familiar western profiles that express the joy of cooking we’re so familiar with. They tend to have more slender and flatter profiles vs their more curvaceous German neighbors, enabling them to perform beautifully with a pull stroke in addition to the standard forward rocking motion preferred by German knives. In fact, French knives largely inspired modern Japanese double bevel knives once trade between Japan and the West opened up during the Meiji restoration. The Japanese took the French profile and further accentuated the flatter and slender style into their gyuto, petty, and sujihiki knives.
