This is the best cutting board in the world, seriously! Not harvested until a ripe 250-300 years old, Hiba trees grow in the Aomori Prefecture in Northern Honshu and are a part of the cypress family. Aomori Hiba wood makes for and ideal cutting surface because it has the perfect firmness level, so it won't damage blade edges. Due to a compound called Hinokitiol, Aomori Hiba wood is also naturally full of antimicrobial and germicidal properties and is super duper rot and mold resistant. Because of these resilient properties Aomori Hiba wood is often reserved for building shrines and temples in Japan. Plus it smells amazing!
