We are proud to call Hitohira ひとひら (一片) our main Japanese supplier, and for good reason. Despite being a relatively new brand in the premium Japanese knife industry, Hitohira boasts one of the most diverse, unique, and robust product lineups in the entire market. Based in Tokyo, Hitohira brings a unique focus on building trust with the craftspeople they work with. By putting the artisan’s needs first, Hitohira has been able to gain favor with the best makers all over Japan and design some of the most beautiful and rare knives we have the pleasure of handling. Care advisement: Carbon with Stainless Clad
This blade has a stainless cladding around most of the knife except for the edge, which is fully carbon. Care must still be used to avoid rust especially on the carbon portion of the blade. Wipe dry after each use, and ideally between preparing different products, especially when using acidic and salty products. A patina will form over time on the carbon portion helping increase stain resistance slightly. Hand wash and dry only. Store away from liquids and open windows. Keep the blade covered when storing or traveling. Use only on appropriate cutting surfaces such as softer woods and plastics.
